Sour Cream Potato Casserole

Casseroles are famous for being easy main dishes or sides. Whether you’re looking for a quick fix at home or trying to make something for a last-minute shindig, this Sour Cream Potato Casserole hits the spot.


  • 6 russet potatoes

  • 1 tbsp salt

  • 1 cup shredded cheddar cheese

  • ½ cup chopped green onions

  • 1 pint DairyPure® Sour Cream or DairyPure® Light Sour Cream

  • ¼ tbsp paprika


  1. Preheat oven to 350 degrees.

  2. Boil the potatoes in halves in salted water. Once tender, drain, cool and then grate into a large bowl.

  3. Stir in the cheese, onions, sour cream, salt and paprika.

  4. Put the mixture in a casserole dish and bake for 45 minutes until brown.
