High-Protein Pancakes with Blackberry Compote
Ingredients
For pancakes
1 1/2 cups cottage cheese
2 eggs
2 tablespoons DairyPure® Milk50™ Original
1 cup flour
1/4 cup sugar
1/2 teaspoon vanilla
1 tablespoon baking powder
For blackberry compote
1 cup fresh or frozen blackberries
2 tablespoons sugar
1/4 teaspoon cinnamon
1/2 teaspoon lemon juice
How to
Preheat oven to 200°F and set a wire cooling rack inside of a baking sheet.
Blend all ingredients together in a blender on high until smooth. Heat a griddle or nonstick skillet over medium heat. Spray the pan with a bit of nonstick cooking oil, then pour about 1/4 cup pancake batter into the pan. Cook on first side for 1-2 minutes until golden brown, flip, and cook another minute until no longer soft in the middle. Place pancakes on the wire cooling rack and keep warm in the oven until ready to eat.
Stir together blackberries, sugar, and cinnamon in a small pot. Add a splash of water and bring to a boil on medium high heat, then reduce heat to medium and simmer until sauce has reduced and thickened slightly, about 10 minutes. Lightly smash blackberries with the back of a spoon and stir in lemon juice. Let cool slightly before serving with pancakes.
