Chai Oatmeal Energy Bites

Ingredients

1 cup DairyPure® Milk50™ Vanilla

3 chai tea bags, divided

2 cups old-fashioned oats

1/2 teaspoon salt

2 teaspoons baking powder

2 tablespoons flax seed

1 teaspoon vanilla

1/3 cup maple syrup

1/2 cup chopped pecans

How to

In a small pot, heat milk until very hot but not simmering. Take off heat and place 2 chai tea bags in milk. Steep tea in milk until it has cooled, about 30 minutes, then discard tea bags.

Preheat oven to 350°F. Spray a mini muffin pan with nonstick cooking spray. In a large bowl, stir together cooled chai milk, oats, salt, baking powder, flax seed, vanilla, and maple syrup.  Open the third chai tea bag and measure 2 teaspoons of tea. If the tea is very coarse, blitz it in a spice grinder or use a mortar and pestle to grind it more finely. Stir tea into batter and let mixture sit 10 minutes so the oats can soak up the milk.

Give batter another stir, then fill each mini muffin cavity about 3/4 of the way with batter, about a tablespoon in each. Sprinkle chopped pecans on top. Bake bites for 12-13 minutes or until a toothpick inserted in the center of one bite comes out clean. Let cool 5 minutes before enjoying for a morning breakfast or afternoon energy boost.
